In my fridge this morning I had 2 baked potatoes that I either had to use or throw away. So what could I make with them? I figured I had enough ingredients in the house to make make some kind of omelet & fried potatoes. Then I remembered a friend told me that they make personalized omelet in their Demarle tray.
Last night at my Demarle party Mrs. Case demonstrated how to roast potatoes using Demarle products. So I decided I would try roast my baked potatoes on a Silpat and make hash brown omelets in the muffin tray. Here how I made my individual hash brown omelets:
Individual Hash Brown Omelets
2 baked potatoes (peeled & diced)
1 slice turkey lunchmeat (chopped)
red pepper (chopped)
1 small can mushrooms
10 eggs (whisked)
Garlic Powder
Tones Rosemary Garlic Seasoning
Spread the diced potatoes on the Silpat (which is on a Perforated Baking Sheet). Sprinkle garlic powder and rosemary Garlic on the potatoes. Bake potatoes for 20 minutes or until lightly browned (they should be hot at a minimum).
Scoop potatoes in to muffin tray. Top with ingredients for the omelets (meat, peppers, mushrooms, etc). Pour eggs on top. Bake approximately 30 minutes or until eggs are brown and shiny on the sides.
